Nordic Table FIKA Dinner – The Vikings Begin (Sold Out)

A meal fit for a Viking

Join the award-winning culinary team at FIKA, led by executive chef Blake Meier, for an intimate, multi-course evening dinner complete with drink pairings, inspired by ASI’s upcoming exhibition The Vikings Begin.

The meal will be a family style dinner, and each course will be paired with selected beverages.

On the menu

  • Welcome toast with sparkling mead

First course:

  • Danish rye, crispbread, seed bread, butter
  • Pickled root vegetables, pate, berry jam, farm cheese
  • Drink pairing: ale

Second course:

  • Lake trout gravlax, grain salad, currant mostarda
  • Turnips, apple, hazelnut, cracked wheat porridge
  • Grilled carrots, elderberries, ramps, cardamom
  • Grill soft shell crab, leeks, salt pork, lemon, fava bean
  • Drink pairing: homemade shrub cocktail

Third course

  • Lamb sausage, sunflower sprouts, stewed olives
  • Smoked duck confit
  • Forged herb salad, vinegar, pressed lemon oil, pickled onion, golden berries, lingonberry, blackberries, goat milk ricotta
  • Drink pairing: Beaujolais Villages wine

Fourth course:

  • Whole roasted suckling pig, herbs, mead braised mustard greens
  • Drink pairing: sour ale

Fifth course:

  • Honey cake, chamomile flowers, clove spiced cream
  • Drink pairing: mead
