Nordic Table Masterclass: New Nordic at Home with Chef Scott Graden

If “Scandinavian food” only conjures visions of meatballs and lefse, a day with Chef Scott Graden of the acclaimed New Scenic Café outside Duluth, Minn., will change your mind and give you loads of new inspiration for your holiday table and beyond. In this fast-paced, one day class, Chef Graden will draw from the approach of the New Nordic cuisine, a movement to use seasonal and local ingredients in exciting, modern ways. Students will jump in to create elements of a shared meal, including sauces, sides and something sweet. Everything from cultural context to tips for preparing ingredients will be covered, with lots of time for questions and exploration.

This class will take place at the Whole Foods Lake Calhoun teaching kitchen and include a shared meal.  

Students may also be interested in joining Chef Graden for a Friday night lecture “Simple, Honest, Aware: Scandinavian Influence in a Midwestern Kitchen.”
