Nordic Table — Richard Tellström on Smörgåsbord and Snacks

Richard Tellström, ASI food historian-in-residence, Malmberg Fellow and acclaimed Swedish food writer and historian from Stockhom University, will offer a series of fascinating food-related lectures. In this talk, he’ll share Swedish traditions about starting a meal with a sandwich, or its variant, the sandwich cake. He’ll also review the history of smörgåsbord, and reveal dishes that must be part of different types of meals and how they might be cooked.

For example, a smörgåsbord may develop from the liquor board (brännvinsbord) and later become the Christmas table. He will also talk about beverages in Swedish history and how they are used in a meal, Swedish cookie traditions and coffee parties and how they developed into the Swedish fika.
