Nordic Table Workshop: Danish Classic Aebelskiver

The historical origin of aebelskiver – or Danish “pancake balls” – is unknown, but a popular tongue-in-cheek theory suggests they were invented by Vikings who cooked pancakes in their dinged-up helmets. Traditionally eaten during Advent and served with powdered sugar and raspberry jam, aebelskiver are essentially celebrations of fats, sugars and cute food.

This class is a combination of demonstration and hands-on practice. Students will learn about basic sweet and savory batters, techniques for turning the aebelskiver in the pan and different toppings. Lots of sampling is involved!

Renata Fossett and Carstens Smith teach aebelskiver classes for Ingebretsen’s, who has kindly agreed to share them for this event. Both teachers enjoy researching food and creating new forms of traditional favorites.
