Nordic Table Workshop: Fermenting the Fall Harvest

Thursday, October 4, 2018 - 6:00pm to 9:00pm

Fermentation is one of the oldest techniques of food preparation, and fermented foods have always been an important part of Scandinavian cuisine. Instructor Eric Edgin will lead students through the joys and pitfalls of fermenting fruits and vegetables at home, a crucial part of preserving the fall harvest. In this fast-paced evening workshop, students will walk through the process of preparing vegetables for fermentation, taste ferments in process, and learn a little about the science and culture of fermentation in general. Students will head home with a fermenting vegetable in hand!

Eric Edgin grew up in rural southern Illinois where fishing, hunting, foraging and gardening were a way of life. He has continued to build on the skills and knowledge of his roots by woodworking and teaching self-sufficient food classes, harvesting his own food, and perfecting food preservation and fermentation methods from around the world in a local context
