Nordic Table Workshop: Skyr – Making Icelandic Yogurt

Skyr is a thick and tangy Icelandic yogurt and a national culinary treasure. Traditionally made from skim milk, it’s high in protein and low in fat – but doesn’t taste like it! In all Nordic countries, a harsh northern climate with limited agriculture has made dairy and food preservation techniques like souring milk essential resources for survival, and Icelanders have traditionally made skyr at home. Anna Sharratt will explore Iceland’s unique culture through the lens of skyr in traditional and contemporary life, from turf farms to ancient sagas to modern poetry. You’ll go home with a jar full of skyr and new recipes to use it in!

Youth ages 10 and up may accompany a registered adult for an additional $20.

A $10 materials fee is payable to the instructor for reusable jar and muslin towel.

This is a 2 day class!
